FINALLY!! The Michelin Stars result which everybody has been waiting for is finally here!! It is indeed very challenging to gauge our Singapore’s hawker food with a star but well here we have 2 hawker stores with 1 Michelin stars.
The Assessment Criteria which the Michelin Inspectors look out for:
1) The Quality of the products
2) Mastery of flavour and cooking techniques
3) The personality of the chef in his cuisine
4) Value for money
5) Consistency between visits
All the meals are paid by the inspectors.No one will know who are they. These inspectors are from the catering and hospitality industries. The judging comes in form of a collective decision to ensure a balance in the judgement.
AND YES CONSISTENCY PLAYS ONE OF THE HUGE PART IN RETAINING THEIR MICHELIN STARS!!
Every year the Michelin Guide changes, therefore if any restaurant does no maintain their standard they will have star be taken away from. For those highly potential restaurants which many Singaporeans and even overseas tourists has been look out for but did not get the stars which they deem that they should get, do not fear as they will definitely receive their deserved one in time to come as long as they work hard with consistency and improvement. All these comes beyond creativity too!

Till date in his career, Joël Robuchon’s restaurants have been awarded a total of 33 Michelin stars with his current count at 30, and is the highest number for any chef in the culinary world.
