We aren’t too late to enjoy the yummy éclairs created specially by Sarah and Michelle which are still available till this coming 28th of February! The locally-inspired flavours includes Kaya Pandan, Bak Kwa Pork Floss, Pineapple Tart, and Black Sesame. Talking about the actual savoury such as the Bak Kwa… I know you might hesitate! However once you get a bite of this savoury éclair, you will love it especially if you love are a Bak Kwa lover! The Pineapple Tart is just like our homemade ones which used premium honey pineapple; simply tangy, juicy and not too sweet. For the rest, you just have to taste it yourself. Beside having this giveaway, let us check out a little about these 2 ladies through a mini interview.
Summarised Introductory of Sarah and Michelle
Both of us are friends, who met 5-6 years ago. We had the same dream of opening our own pastry or bakery shop. We are both 27 years old now. Previously Michelle was an accountant while I was working in Spring Singapore doing industry development. In 2013, we actually quitted both our jobs and went to Le Cordon Blu in Paris to learn pastry. After completion at the end of 2013, Michelle continued with her internship while I started testing the market by selling mini éclairs. We opened L’éclair by Sarah Michelle in 2015.
We thought of éclairs instead of other desserts was because…
During our time in 2013, we were exposed to éclairs all over Paris and other European countries like London. We also read up online about the picking up trends of éclairs which was happening even in US and other parts of Asia such as Bangkok. We didn’t see any specialty shop which usually sells about 10-15 flavours éclairs in Singapore and therefore we decided with it.
Where did you get your ingredients from?
Our butters and chocolates are from France while the basic items such as flour are purchased locally.
What is the difference between your éclairs and others such as the Japanese’s style?
The difference lies within the basic Choux pastry. My personal opinion is that the Japanese style’s is spongier, softer and lighter compared to the traditional French style’s which is crispier on the exterior. On the other hand for flavours, we focus more on traditional French pairings and a bit of local such as our Chinese New Year creations.
What are your best sellers of éclairs now?
It always changes. Usually it will be our Lspahan which is the French flavour with light rose cream, cut lychees, fresh raspberries. Next is our dark chocolate which comprise of 66% mexique dark chocolate cream, cocoa glaze and cocoa streusel. Our Chinese New Year creations are currently our best sellers for this period.
One of the main challenges in our industry…??
Manpower shortage… Generally it is not just about hiring, retain staffs for the long term basis is another great challenge. It is also rather hard to train up one to a certain skill level as well.
The most difficult thing in making of éclairs…??
I think it will be amount of effort especially for high volume as the production is very repetitive. Almost every process such as the filling, piping and glazing are done manually by hand.
Your favourite savoury dessert…??
White truffle with hazelnut macarons from Pierre Hermé.
Are there any new flavours of éclairs to look forward to?
Currently we are exploring in coffee flavour. More flavours are on the way too!
