“Good food and company are integral aspects of a good time. They are a part of The Boiler’s DNA and stem from my personal upbringing and our local culture. With the restaurant’s new location in the city, we bring our famed menu and sauces to the people,” says founder Mr. Malcolm Hong, who is a banker turned restaurateur.

In celebration of their new foothold downtown and fourth anniversary, The Boiler is also bringing back the special Tamarind sauce for a limited time. The Boiler’s Tamarind sauce is a refreshing juxtaposition to the richer crowd favourites. The tangy touch from the fresh tamarind water used whets one’s appetite upon the first whiff. The addition of the perfect amount of butter and fried shallots gently pulls back on the acidity from the sauce so as to preserve the palate’s ability to taste the crustacean’s natural taste without overshadowing the subtle hints from the onions, chilli padi and Thai basil. This sauce is truly good enough to drink on its own with those emptied clam shells.
For those who are up for a slightly more robust flavour profile without the Asian heat and spice, look no further than the Peppa’ Butter. Built on the chicken stock base similar to the milder garlic butter sauce, the chef has figured out the golden ratio of black and Sarawak white peppers to create the perfect balance between the black pepper’s aroma and heat from the latter. This buttery upgrade from the classic Singaporean black pepper crab should be on the radar of every Singaporean pepper crab lover.
With an appearance that is akin to laksa gravy and it’s whiff of creamy butter, The Boiler’s signature sauce adds local flavour to the Louisiana seafood experience. This crown jewel is a secret and meticulous blend of 11 Asian and Cajun spices that are freshly pounded and packed on a daily basis for use in the kitchen. Opt for mild, medium or ragin’ hot. For some, ragin’ hot is just another way of saying ‘shiok’.Although the sauce is an explosion of flavours within the mouth, with the right amount of lemon juice, The Works enhances instead of overpowering the natural flavours of the seafood, especially the crab.
The mildest of all sauces, the creamy goodness is concocted with a hearty base of chicken broth made from scratch, and substantiated with just the right amount of garlic, butter and cream to provide a more full-bodied gustatory experience without overshadowing the natural sweet taste of the crustaceans. This classic with a twist is ideal for those dining with young ones and the perfect pair with the Boston lobster.

On top of the sauce selections, the signature sauce – The Works, can also be customised to suit different spice-tolerance levels. For those who can spicy, we would recommend you to head for the highest level!
Besides the famous seafood-in-a-bag repertoire, diners can also expect a wider variety of a la carte items and libations in the restaurant’s menu at Esplanade Mall.

Boiler’s signature fried sweet caramel banana and Mao Shan Wang durian fritters with salted Gula Melaka toffee are really traditional and tasty while the Petit Chocolate Fudge Cake were smooth and chocolaty.
To have a fun and hearty experience at The Boiler, Malcolm reckons that the best way to enjoy the seafood is to have it poured onto the table and sink fingers into the course. However, for those who prefer their food hot, they may keep their seafood within the bag. Bibs, gloves and even mobile phone covers are provided because a good time should not be compromised by accidental stains and The Boiler is definitely thoughtful in that way!
