A whole new experience of North Indian cuisine led by the team from Punjab Grill at Marina Bay Sands Singapore has already set its foot into Clarke Quay. Maziga is here to redefine North Indian cuisine while retaining the tradition of using all kinds of Indian spices.
Maziga is not just a typical Indian F&B restaurant, it is also a Bollywood bar and club! Executive Chef Javed Ahamad wants to more people especially the new generation to experience Indian cuisine while they are having fun partying at night.
The ground level operates for diners to enjoy their food in the restaurant bar while the 2nd level is for those who wants to party. DJs will be spinning away the latest Bollywood dance music from 11pm on Friday and Saturday till wee hours in the morning.
New Twist, Redefined with New Settings
Before meal you will want to start off with a selection of spiced cocktails.
Using curry leaves to give a hint of the curry fragrance is indeed one of the interesting cocktail we have tried. This drink is simply refreshing and yet not over-powering with the alcohol content.
Let us check out what Chef Javed has set for the new image of the traditional Indian cuisine:
Old Delhi Golgappa Chat
Chillied Jaljeera Oxide
Just like your very own mini wonderland of mystery with mini chairs filled with smokiness. There lies the crispy thin Golgappa aka pani puri, which is filled with fresh yogurt. Mint & Coriander (Green) and Tamarind (Orange) water are usually served with this dish.
Next up is to get ready to experience cold and explosive flavours of either or both liquids together in your mouth!!
Bhatti da Murgh Quesadilla
Chicken Keema, Tortilla Wraps, Must Amul Butter
North Indian X Mexician!! What a way to enjoy the tasty quesadilla with butter and not with cheese this round.
Lamb Galuti Kebab in Maska Pav (with Desi Garlic Chutney) / Vada Pav Burger
The Lamb Galuti Kebab pattie is ultra minced till very creamy; not everyone will enjoy the texture though. One of the ingredients used is the roasted chana dal; a type of legumes while the rest consist of rose pedal power, sandalwood powder, crushed chili powder and more. On the other hand if you are a vegetarian and looking for something which is rather filling, Vada Pav is the one to go for. It is a dish native to the Indian state of Maharashtra which uses potato temper with curry leaves and mustard seeds before making into a pattie and served in a bun. That’s too much carbo for us, we will love the deep fried pattie on its own.
Berries Biryani with Khasta Panda
Long Grain Basmati, Berries, Goji Berry Raita
Not your usual nasi briyani, Neither its curry’s coconut. Healthy eating is the key! The Goji Berry Raita is made up of yogurt. You may think twice but well after having it together with the rice cooked with berries together with the raita, you will like it. Sweetness of the raisins and goji berries goes really well with the sourness of the yogurt. Always good to share this portion if you want to enjoy a varity of dishes.
Tandoori Garma Garam Prawns in Seafood Pilaf
Huge fresh tiger prawns is what we love but not ignoring the rice either that is full of moisture filled with spice fragrance and coconut milk! The ‘curry foam’ which comprise of kalif lime, fish curry together with other spices and ingredients gives this dish additional aroma and creaminess.
Tandoori Prawns / Twisty & Jahakas Jhinga in Fillo with Garlic Mayo Dip / Jerky Lamb Ribs
1. Refreshly marinated huge tiger prawns in a citric blend of lemon juice and ajwain before grilling it in a tandoori.
2. Trolley presented twisted fillo is wrapped with prawn served with delicious dip. Such a toy with tasty bites!
3. The Australian baby lamp chops is well marinated with many spices. By its look, its simple but after knowing the ingredients you be wow! That is why Indian food is so fragrant.
Baked Khumb & Palak
Ricotta, Baby SPinach, Mushroom served along with Saffron Korma
Cheese lovers on the lookout!! This is a must have item.
This might not justify by the video but you can’t stop once you start! A good way to add mushroom as the moisture balance well with the cheesiness so one will not feel overdose.
Chyawanprash Cheese Cake / Masala Chai Kulfi
Another healthy dessert to go! Chyawanprash is actually a comprehensive herbal tonic that is known of its anti-aging and other health benefits. It contains a mix of anywhere from 30 – 80 powerful Ayurvedic herbs with Indian Gooseberry as the base therefore this jam is actually sweet on its own. This dessert comprise of a very light amount as some people might find the herbal a little too strong. However, we actually liked the Chyawanprash on its own and we do suggest to allow additional jam for those who wants to experience the original taste.
There are rose petal and masala chai kulfi that is either served together with the cheese cake or you can order them on its own.
Look out for more tapas with interesting cocktails and dessert. Meanwhile head down to club if you yet to experience the Bollywood style!
