We had a great introductory session about Kansai products over at Boruto Sake and Tapas Bar!
For those who do not know where is Kansai, it is actually located at the western region of Japan centering around the the ancient capitals of Kyoto and Nara. Kansai is Japan’s ”second region” after Tokyo which is once home to Japan’s most traditional cultural centers and its most modern culture.
The traditional Kansai dishes are based on high quality, flavorful dashi stock and light soy sauce. The people of Osaka, a major part of Kansai, are so enthusiatic about their local food that it is often joked about how Osakans will spend their money indulging on food until they go bankrupt. Sake is another specialty of the region where there areas of Nada-Gogo and Fushimi produce 45% of all sake in Japan.
Information about sake and the type of sake rice used were shared by Konotomo Brewery and Sanyo Homare prior and during the dinner. This collaboration is also to showcase authentic Japanese food prepared by Chef Angus Chow of Boruto, using ingredients exported by The Jansai Food Export Promotion Copperative Assocation (KFE) and Miumi Japan Food Co Pte Ltd. The KFE’s vision is to create new systems of food export from Kansai by combining distribution channels and logistics to widely spread Japanese food culture to the world while Miumi is a young and aspiring company which specialise in providing highest qality of Japanese food products such as Wagyu beef, Kurobuta pork and seafood.
Presenting to you is also one of the Gem of Kansai, the Japanese green tea. We had an hands on traditional matcha tea making session using green tea leaves by Maiko Tea (MAIKONOCHA-HONO) which is located in Kyotanabe City of southern Kyoto. They are also famous for producing Gyokuro tea that are prized for its superb aroma, sweetness and full-bodied flavor.
