Be it travelling or staying at home, Constance Song (those of us who knows her as our local celebrity) has been always on the lookout for tasty quality food to fill her tummy with pleasure! She simply loves to enjoy good food.
Ever since Constance has an impeccable meal at the now-defunct Michelin-starred Santi where she met Chef Pepe Moncayo whose real name is actually Jose Moncayo, and who was then the Chef de Cuisine, she became a big fan of him, especially for his creativity and innovative brain. Just like what she has mentioned in Epicure Magazine, ‘When I found out that he wanted to spearhead Bam!, I decided immediately that I should work with him.’.
Fast forwarded, the partnerships with the avid foodies – Constance Song and Ben Chng, BAM! Tapas-Sake Bar which was established has now expanded to a full-fledged restaurant since November 2016 with table seating and even a private room – the open kitchen counter is still available too! BAM Restaurant continues to serve Spanish-influenced cuisine with some Japanese influence while do keep alook out for something special along the way.

Can you share with us your best practices?
We procure the freshest seasonal ingredients from all over the world for our dishes. We believe in providing quality food and service.
How do you deal with the stiff competition in the F&B industry?
There will always be competition in almost every industry and it is great the f&b scene is bustling in Singapore. As long as we stay true to what we set out to do – quality food and service – and ensure each diner enjoys every dining experience with us, we believe diners will return. At the same time, this also pushes us to be innovative and keep striving to create interesting menus/events for diners to continually have something to look forward to with Bam!
Tell us more about the pairing Spanish tapas with sake; will this catch on as a trend here?
Since we introduced “Modern Shudo” when Bam! started 4 years ago, we have seen an increasing number of diners learning to appreciate sake pairing with our cuisine. Sake has a high amino acid content, which heightens the “umami” in food, enhancing taste and bringing forth the rich savoury elements.
Unlike Wine, which has the acidity that can cut food flavors in certain cases, sake is brewed from rice and this enables it to be harmonized with every type of food flavor, which technically makes it a much better drink for enjoying food – any type of food – than wine.
How would you educate your target audience/customers on this kind of pairing?
We recommend our diners to pair their meals with sake and recently, we also launched Sake~Tapas Tastings, which happens every Monday 6 pm – 8 pm and Dessert Omakase with sake pairing to try out what “Modern Shudo” is about.
What is the distinctive flavour in sake pairing versus wine pairing?
Sake is an “all rounder” and it’s a misconception that sake only goes well with sushi or Japanese cuisine. We want to educate and let as many diners as possible try for themselves and be pleasantly surprised in a discovery of another level of dining experience. Our service staffs have undergone in-house training to understand sake pairings and they would be able to share this knowledge with diners.
How do you select your sake to pair your food and where do you get your sources from?
Chef Pepe and our sake sommelier discuss and decide on the pairings together. We work with suppliers who believe in quality and consistency in their products.
What will be your business direction in the near future?
We will keep improving and be evolving to continue to give diners good dining experiences.
From June 2017, the team will be on the quest to pamper you with their outstanding gastronomic experiences – the well-loved Bam! Omakase. Ala carte items will no longer be available but rest assured you will still be enjoying Bam! Signature Dishes as always!
